Portuguese-Style Roast Chicken

Portuguese Roots…

Hi everyone, today Liz and I thought we’d take you back to our roots. Not to Portugal though…. nope, we’re staying in the Greater Toronto Area, where we live. I want to share with you a typical way that the Portuguese like to flavour and prepare chicken. It’s the way Liz and I grew up having chicken, living in Toronto. It’s the way we still like having our chicken, whenever we get to a Churrasqueira.

What’s a Churrasqueira?

A churrasqueira [sounds like shoe-rra-shkaa-ra] is a Portuguese eat-in or take-out-style restaurant that barbeques meat on a grill or in a rotisserie oven. There are lots of these churrasqueiras in and around the Toronto area, and let me tell you, we’ve visited our fair share of them!

Churrasqueiras usually offer limited sit-down and delivery service, but I’d say they’re most well known as hot-food table or take-out places. Although most of them have a wide selection of delicious foods we usually relate these restaurants to their BBQ peri-peri chicken…with Parisian potatoes and rice! If you ask any non-Portuguese speaking person in the Toronto area about Portuguese churrasqueiras, they’ll likely say “Oh yeah… the Portuguese chicken place–love it!”.

Roasting Portuguese-style chicken at home

Although we love to visit Churrasqueiras, I also love cooking. So I figured, why not try to make this deliciousness at home. It worked out so well. This version is super tasty, juicy and it’s similar to the Portuguese restaurant-style BBQ chicken we know and love. I went light on the spicy “heat” because our little guy doesn’t like a lot of spice. But, feel free to bump up the ‘heat’ a notch!

If you’ve never had the good fortune to eat chicken this way…we suggest you give our recipe a try. We also recommend you enjoy it with our oven roasted potatoes. If you’re feeling a little lazy, or you happen to be near one…go visit a churrasqueira and see what all the hype is about. Yummm…always eat well, friends!

We sometimes order Portuguese style chicken from local restaurants. Our recipe tastes similar and it's so easy to make at home! Tender, juicy and flavourful!

Ingredients
  • 2 whole chickens about 3.5 (1.6kg) each
  • 6 cloves garlic minced
  • 1 1/2 Tbsp paprika
  • 1/2 cup olive oil
  • 1/2 cup Frank's RedHot
  • 1/3 cup freshly squeezed lemon juice
  • 1/4 cup unsalted butter room temperature (1/2 stick)
  • 3 tsp salt
  • Kitchen string
Instructions
  1. Preheat the oven to 425 °F.
  2. Spray a large roasting pan and rack with cooking spray and set aside.
  3. In a medium size bowl, whisk together the minced garlic, paprika, olive oil, Frank's RedHot and lemon juice, and set aside.
  4. Take the chickens out of the fridge and place them on a cutting board.
  5. Pat the chickens down with paper towels and discard the paper towels to avoid cross contamination.
  6. Sprinkle about 3/4 tsp salt inside each chicken.
  7. Pour about 1/4 cup of the sauce inside each chicken.
  8. With a clean hand, swirl the salt and sauce inside the chickens until the fully coated.
  9. Wash your hands!
  10. Sprinkle the remaining salt evenly on the outside of the chickens, about 3/4 tsp per chicken.
  11. Rub the salt all around the chickens, make sure to also get around the legs and wings.
  12. Using clean hands, coat the outside of both chickens with the butter, making sure the get all parts and crevices.
  13. Place the chickens on the roasting pan rack, inside the roasting pan.
  14. Tie the legs together with kitchen string and fold the wings under the chickens.
  15. Using a brush or clean hands, coat both chickens with the remaining sauce. Pour a little at-a-time and brush/baste until the chickens are fully coated in the sauce.
  16. Note: a bit of sauce will drop off the chicken. This is expected and okay. Pour slowly and try to keep as much of the sauce on the chickens when brushing it on.
  17. Place the roasting pan in the oven on the second level.
  18. Roast for about one hour.
  19. Open the oven door to carefully and loosely cover the chicken with tin foil.
  20. Continue to roast for another 20 minutes. The internal temperature of the chicken should be around 160 °F.
  21. Remove the roasting pan from the oven and tent with tin foil for about 15 to 20 minutes.
  22. Carve and serve hot with your favourite sides.
  23. Enjoy!
Recipe Notes
  • Feel free to add more kick with hot pepper flakes or hot sauce if you like it spicy. Our family likes it pretty mild. Frank's RedHot isn't very spicy.
  • You will need a large roasting pan with removable rack.
  • Wash your hands often when dealing with raw chicken and keep your surfaces clean at all times.

Roasted Chicken with Sautéed Onions and Peppers

Blast from the past.

Liz and I recently took a drive down memory lane on our food blog. This post from last November stood out for us because we love this meal and the story brought back great memories of when we setup Michael’s music room. This space for Michael has been such a hit and it’s been a source of inspiration for him. His music, editing, writing and social media skills have improved dramatically and we’re so proud of him!

If you’ve been following our blog for a while now, this post may be familiar. But if you’re a more recent follower, this will be new to you. Whether it’s your first time or not, we hope you enjoy this recipe and story as much as we do.

Time flies!

You know those days and weeks that fly by in a blink? We all have them, I’m sure. Well the last couple of weeks have felt like that for us. I mean…where did November go? I barely saw it arrive. I think I blinked, and poof, it disappeared. And…I am nowhere near ready for the holidays.

The Music Room.

On a far less whiny note, our eldest son’s music room is painted and the guitars are up on their hooks (and the drum set is setup–oh yea me!). The room actually looks really nice and he’s thrilled with his fresh new space where he can get lost for hours playing guitar.

Thank goodness we ended up calling Antonio, our painter friend, or else that room would not have been finished until December 2016…maybe….and it certainly wouldn’t have turned out as nice.

Focusing on your true passion!

Getting the job done by someone else gave us the chance to focus on what we’re better at doing (three guesses…and it’s not home renovations). So here’s how we demonstrate our creativity…and our love of poultry. This isn’t exactly a quick weeknight meal, but on this night, Nelson had the chance to get started on supper earlier than normal, so this roast chicken with sautéed peppers and onion was quite a nice treat.

The right call…

Whether you're entertaining guests or making dinner for your own family, this roast chicken recipe is easy to make and so delicious.

Ingredients
  • 4 tbs olive oil
  • 2 red bell peppers, diced
  • 2 green bell peppers, diced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2½ tsp salt
  • 1 tsp freshly ground black pepper
  • 1½ cups diced tomatoes
  • ½ cup white wine
  • 2 whole raw chickens, cut in quarters
Instructions
  1. Pre heat oven to 325 ºF
  2. Heat 2 tbs olive oil in a large frying pan on medium high.
  3. Add onions and sauté for 4 minutes.
  4. Add garlic and sauté for 1 minutes.
  5. Add green and red peppers.
  6. Add 1 tsp salt, ½ tsp black pepper, diced tomatoes and white wine.
  7. Stir all the ingredients, cover and reduce heat to medium.
  8. Simmer for 15 minutes, uncover and set aside.
  9. Line a large roasting pan with aluminum foil.
  10. Place the pieces of chicken in the roasting pan.
  11. Baste chicken pieces with remaining olive oil.
  12. Sprinkle 1½ tsp of salt and ½ tsp of black pepper evenly over the chicken pieces.
  13. Using a large serving spoon, scoop a spoonful of the onion and pepper mix over each piece of chicken until all pieces are covered. Divide any remaining peppers over the chicken equally.
  14. Place the pan in the oven on the middle rack.
  15. Cook for 50 minutes. Do not open the oven door.
  16. Raise the heat to 375 ºF and let cook for another 20 minutes. Do not open the oven door.
  17. Change the oven setting to broil and set the temperature to 450 ºF.
  18. Let the chicken cook for another 8 minutes.
  19. Using a thermometer in the thickest past of the meat, check that the internal temperature is 165°F (74°C)
  20. Shut off the stove and carefully remove the roasting pan.
  21. Serve chicken hot with your favourite side dish. Enjoy!
