This salad is so fresh. It's a perfect side for your protein and great on it's own. A delicious mixture of veggies with a lemon based dressing.

Servings: 4 to 6 side salad servings
  • 4 roma or plum tomatoes, diced
  • 1 english cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 3/4 cups chopped flat leaf parsley, finely chopped
  • 1/2 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  1. Ready?... Place all the ingredients in a bowl, mix well and serve! Yup... that's it!
